Baking Courses, What to Expect 

Before exploring our baking courses, it’s important to consider what type of programme you’re looking for. At CTIA, we have full-time and part-time patisserie courses which result in a culinary diploma and ‘how-to’ short-term baking courses which cover the basics and are best suited to home chefs. As such, our course offerings suit aspiring culinary professionals and culinary hobbyists keen to enhance their skills. Our baking courses include the following options:

  • Full-time patisserie qualification: We have several full-time options that include patisserie. Students can enrol in the three-year chef programme which includes a diploma in patisserie, an 18-month cook qualification that includes a diploma in patisserie, or a 12-month pastry programme. Subject areas include prepping, cooking, and finishing a range of pastry products and desserts, such as cakes, sponges, biscuits, hot desserts, cold desserts, dough products, and chocolate products. These subject areas are also covered in our part-time courses over a longer duration.
  • Part-time patisserie qualification:Part-time courses are ideal if you’re juggling work and studies and need to take things a little slower. Our part-time patisserie offerings include an 18-month combined culinary arts and pastry qualification and a 12-month pastry chef programme. You’ll glean the same skills as if you were in the full-time programme but work at a gentler pace so that you can manage other responsibilities too.
  • How-to baking series:CTIA offers a series of how-to courses for home cooks who want to up their game. Our baking series runs for 9 weeks and covers all the basics of baking. There is also a combo option which covers the basics of cooking and baking. Chat with your nearest CTIA campus about course times and availability.
