How Does It Work?

Theory is delivered through our online platform (Moodle), where students access videos, activities, assignments, and attend online classes. Hands-on training includes manuals, recipes, video tutorials, and live sessions via Microsoft Teams. Students submit video and photo evidence of their practical work for assessment, concluding with a final practical exam at the nearest CTIA campus.

Duration: 6 months

Content: This programme is specifically designed to establish a robust foundation in the culinary arts for beginners and enthusiastic foodies alike.  This programme covers essential culinary concepts, practical skills, and industry knowledge to set students on a successful path in the culinary world. It also provides you with the basic qualification needed to start your career on a luxury yacht or cruiseliner.

Hospitality Programme

1. Hospitality Programme – Hybrid*

Accreditations: City & Guilds

Duration: 6 months

Content: This programme is for students with a passion for the hospitality industry, who love working with people and who want a solid understanding of food-and-beverage operations. This programme combines all the essentials of food and drink preparation, service and supervision with aspects like customer relations, personal development and effective communication.

Professional Programmes

1. Professional Pastry Programme

Accreditation: City & Guilds or QCTO

Duration: 12 months

Content: This programme offers students specialised training in the art of pastry and dessert-making, covering key modules in baking techniques, advanced pastry skills, and dessert presentation.
