Culinary Programmes Explained

- Occupational Certificates: Occupational certificates are awarded to students who have shown proficiency in a particular subject. Our occupational certificate qualifications at CTIA include 12-month courses which bring together theory, practice, and workplace experience. Certificate courses include City & Guilds Professional Pastry Programme and our Occupational Cook Certificate, which is NQF 4 rated. These qualifications offer students a brilliant footing for a career in professional kitchens.
- Diplomas: Diplomas reflect in-depth knowledge and experience and are longer in duration than occupational certificates (but shorter than degrees). Our diploma programmes range from 18 months to three years and include food and beverage service, patisserie, and cheffing. All courses include in-depth theoretical training as well as work-integrated learning in a professional kitchen. Our diplomas are internationally accredited by City & Guilds, meaning that students can access greater global opportunities once their studies are complete. Students can enrol in full-time or part-time offerings depending on their schedules.
- Short-term, modular courses: Short-term, part-time courses are great for those with a passion for cooking. They can also be useful for cheffing professionals looking to enhance their knowledge and experience in a specific area, for example, South Indian cuisine, Italian cooking, or advanced baking and decorating. At CTIA, we have several short courses available for home chefs who want to improve their culinary skills and impress their guests with their newfound talents. We offer a baking course, a cooking course, and a combined cooking and baking course. These courses are available at all four of our campuses.
